Lower Carb Nachos

Lower Carb Nachos:

2 Bell Peppers

4oz Low Fat Ground Beef

20g Diced Onions

1/2 Cup Black Beans

1oz Low Fat Cheddar Cheese

60g Salsa

50g Avocado

30g Low Fat Sour Cream

Optional:

Black Olives

Jalapeños

Seasoning:

Sea Salt

Pepper

Cumin

Garlic Powder

Cayenne

Chilli Powder

Cook meat with seasonings listed. I usually never portion the seasonings, just a sprinkle of each is usually good. Lay out chip size slices of peppers on wax paper on baking sheet. Put cooked beef, onions, beans, cheese, and any other toppings on top of the peppers. In separate bowls, portion salsa, sour cream, and avocado. Use above seasoning on the avocado as well and mix for some really yummy guacamole. 

Bake mixture at 350 degrees for about 15 minutes. 

Dip in sauces/sides and enjoy!
